I'm not really what you would call the recipe posting kind of gal. But this soup is so awesome, I thought I should share. I made this soup twice, once as a trial run and then for our New Year's Eve party. Everyone loved it and it is super easy to make. It is far from fat free or healthy but most good stuff isn't either.
2 cans of cheddar cheese soup
1 can nacho cheese soup
1 sm. brick Velveeta cheese
10 med. potatoes, diced
1 sm. onion, chopped
3/4 can of flat beer
Add water as needed
Boil potatoes and onion. Drain off most of water, leaving about 1/4 of potatoes covered. Add cheese soups, chunks of Velveeta and beer. Mix together until cheese has melted, add water as desired for thickness.

The second time around. I added a full beer and a few more potatoes. You can never have too many potatoes, right? The recipe filled my big crock pot.
I love to make a crock pot full of soup on the weekend and then we just eat that and whatever else is hanging around. I usually cook something on Sunday nights. This weekend I'm making chili, as requested by the husband.

So not on my healthy eating plan but it sounds wonderful! Especially with all that cheese!
This soup sounds awesome! I will def have to try it. I didnt know there were two types of cheese soups, hope they have it at walmart..
My wife would LOVE this soup - she loves beer, potatoes and cheese. I love beer and cheese, but am not a huge potatoes kind of guy. Sure, I don't mind a few potatoes, but (and I think I've blogged about this before) I think Campbells Soup and the other soup companies skimp out because they add too many potatoes to their soup ... obviously, just my opinion.
